1 fresh egg white

1 1⁄2 oz vodka

3⁄4 oz blue Curacao

1 oz Balsam Fir Syrup

Club soda

Place egg in a shaker. Shake until very foamy, at least 20 seconds. Add remaining ingredients. Dry shake until incorporated. Add ice and shake again until chilled. Strain into large flute or Collins glass. Top with club soda. Gently stir to mix.

 

BALSAM FIR SYRUP

Place 1 cup (250 mL) granulated sugar, 1 cup (250 mL) water and 4 to 5 balsam fir tips in a small saucepan. Bring just to a simmer. Let cool completely. Fine strain. Reserve balsam fir tips for another use (see recipe xx). Syrup will keep well, refrigerated in a sealed container for up to 1 month.

Makes 1 1⁄2 cups (375 mL) syrup
